Buffalo Skirt Steak Fajitas Recipe

Magic Marinate:

Marinate the Steak:

  • In a bowl or zip-top bag, combine all marinade ingredients.
  • Add the skirt steak and coat well. Marinate for at least 1 hour, preferably 4–6 hours or overnight in the fridge.

Sizzle the Veggies:

  • Bell peppers in every color + red onion
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add sliced peppers and onions. Sauté until tender and slightly charred, about 7–10 minutes. Season with salt and pepper. Remove and set aside.

Grill the Steak:

  • Remove steak from marinade and pat dry.
  • Grill or sear in a hot cast-iron skillet over high heat for 3–4 minutes per side for medium-rare.
  • Let rest for 5 minutes, then slice thinly against the grain.

Wrap it Up:

  • Warm tortillas + toppings like avocado, cilantro, lime, and salsa

Ingredients

For the Marinade:

  • 1.5 lbs buffalo skirt steak
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tbsp soy sauce or tamari
  • 1 tbsp apple cider vinegar
  • Optional: 1 tsp honey or agave for a touch of sweetness

 

For the Fajitas:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large red onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

 

To Serve:

  • Warm flour or corn tortillas
  • Fresh cilantro
  • Lime wedges
  • Sliced avocado or guacamole
  • Sour cream or Greek yogurt
  • Salsa or pico de gallo
